or, bruschetta! i made this for kai last night. its one of his favorites. very simple and very similar to my salsa recipe. a few tomatoes chopped a bit finer than with the salsa, enough onion to make a nice speckle, a touch of grated garlic, a bunch of chopped basil, salt, pepper and a dash or so of extra virgin olive oil. then slather it on garlic bread or some crunchy crostini, whichever you prefer::
for the garlic bread i mix up a little garlic butter:: room temperature butter, a couple of cloves of grated garlic and some freshly grated parmesan cheese. mix that up and smear it onto your bread slices and broil until golden brown. this stuff is all good!
i also roasted up four heads of garlic to accompany. lets just say, we were all pretty stinky last night. but we didn't care!
