i know the blueberry recipes might be getting old, but this one is really worth typing about. even if you don't have any blueberries, it's such a great muffin recipe. i'm looking forward to trying it with some chunks of ripe banana or maybe even some strawberries::
i doubled the recipe and it made 6 jumbo muffins and about 6 cupcake sized muffins::
i knew exactly the type of muffin i wanted to make with these blueberries, and i did a ton of research online and in my cookbook library to find just the right one. at the last minute, just before starting another that i had already printed, i found it! the aptly named, "to die for blueberry muffins" recipe. and yes, the streusel definitely swayed me. you will probably want to double this recipe as i said. i've since made it again and used just the cupcake pan. the doubled batch made just about 2 dozen small muffins.
ps - you can use applesauce in place of the oil for a healthier version!
