okay, i finally scored this pan at williams sonoma (for a great discounted price due to it not being thanksgiving) and had planned on just packing it away until next fall and doing what i had been wanting to do with it (you'll have to wait and see!) however, one of the little ones pulled the cardboard cover off, which has a recipe for these frosting filled, spiked syrup glazed cakelets...... so, i decided it couldn't hurt to test the recipe before packing the pan away for the better part of a year. i replaced the bourbon with dark rum. mmmmm. lets see....
survey says: they were decent. i don't know if i would go through the trouble of making them again. i think i will try to find a better cake recipe if i do. I wasn't crazy about the spice flavor (even though they are for that time of year). but big b thought they were great.....and he can be a hard man to please when it comes to sweets. also, and i don't think i even need to say it, the kids scarfed them down! (i made a few virgin acorns for them to sample) o told me, very seriously, that i make the best acorns......as though he's been sampling acorn-shaped mini cakes for all of his five years, searching for the right cake to frosting ratio. or maybe he just meant that these ones beat the ones we collect out in the yard. either way i'll take the compliment!
on second thought, and after eating a couple the next day out of the fridge, they are pretty good. i think if i had had two of those pans it would have been quicker and not such a hassle.
