so here it is. i've been wanting to try this recipe for a little while now.

i think this is really a grown up cake. for the first time ever, all three kids refused a treat! i offered them a slice of this today after they had each tried a bite when it was cooling. i wasn't completely sold on it either until i stuck it in the fridge. its another one of those recipes that seems to be missing something. if i make it again, part of me wants to add some strawberries to the top. this is the first time i've baked with just rhubarb. maybe thats what was bothering me. the cake is dense and moist though, i'm considering making it again just to play around with the topping (or, i guess, the bottom - - it being an upside down cake and all).
side note:: if you decide to try the recipe, you will definitely need to adjust the size of the pan. i added a ring of tin foil around the top because i could just tell there was way too much batter and things would overflow if i didn't. maybe next time i'd try using a 10 inch instead of the 9.
i just realized that i have yet to make my second favorite rhubarb concoction. i'll have to do an ingredient check tomorrow but i'm thinking i might just randomly have everything i need!
