i finally did something about the plethora of cucumbers around these parts. i've been craving these pickles for a long long time. so good with a sandwich or just with a fork, straight from the jar!
the recipe:
6 quarts sliced cukes
1 quart sliced onion
9 cups water
1 cup salt
6 cups sugar
5 cups vinegar
1 TBSP tumeric
1 TBSP mustard seed
1 TBSP celery seed
put cukes, onions, water and salt in a pot and let stand for three hours (you may have to weigh down the cukes and onions so they stay submerged). then rinse thoroughly. bring sugar, vinegar, tumeric, mustard seed and celery seed to a boil. add cukes and onions. bring to second boil. remove from heat and pack in jars. store in the fridge.
i made a half batch, only because i was running out of jars. i'll have to make another one soon. we've already emptied one jar, and i also gifted a couple away. with a half recipe i filled 6 16oz jars.
these are so delicious. a recipe from my mom's mom! they always make me think of grammy ellen. she was an amazing seamstress, an eternal optimist, and a happy hour specialist!
