1 cup flour?
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup unsalted butter
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla
1/2 cup oatmeal
1 cup sweetened flaked coconut
sift dry ingredients together. cream butter and sugars. add egg and vanilla. mix in dry ingredients. fold in oatmeal and coconut. bake at 350 for 9-12 minutes.
let me take a moment to explain that question mark by the flour measurement. for some unknown reason, this recipe seems to work well for everyone else but me. i usually need to add about an additional 1/4 cup of flour to the mix. you will know if you need more flour by doing the following; bake only a couple of cookies on the first go. if they melt out too much and come out flat and crispy, you need to add that extra flour. these are meant to be chewy with substance. and are worth any amount of flour tinkering, in my book!
