really, its a good thing, trust me. i saw these cookies in martha's february issue and debated for a bit before making them. i knew if they were as incredible as they looked in the photos they could become a problem. but i took the chance anyway, surprise surprise::
these are the coconut thumbprint cookies with salted caramel. i can't link to the recipe because its not on her website, but these are actually ina garten's cookies. martha and ina hang out, or they used to, i don't know the whole story. use this recipe and fill the cookies with caramel and sprinkle with flaked salt (i used coarse sea salt). it is important to note that you fill the cookies AFTER baking is done. also, baking time is aroung 20 minutes and you should take them out at halftime to press in the thumbprints again.
one more thing, these are very good. they're just not mind blowing. the caramel flavor gets a little lost in the richness of the shortbread. it would work better with something chocolatey i think. i've been dreaming of drizzling some over a warm batch of brownies ever since i baked these up. i'll let you know if i go there.
