if you own this cupcake book, or buy it, or borrow it from a friend, and want to make these broken egg cupcakes, here is a tip:: coat the eggs with shortening (not oil) and then put them in the freezer. now melt your chocolate discs and let the chocolate cool until it is almost setting up again. take the eggs out of the freezer one at a time, coat them quickly with the chocolate and put them in the fridge as directed in the book. after letting them really set up (overnight is best) run the tip of the plastic egg under hot water for a couple of seconds and slide them out. trust me here, this is the only way.
