april fools day may not have been the first time that i ever tasted lemon curd, but it was definitely the moment i realized i should A: learn to make it and B: eat it on a regular basis. it's amazing, period. it also happens to be amazingly expensive, even non-organic varieties. but guess what? super easy to make yourself. just eggs, lemon juice, sugar, butter and a pinch of salt::
now grab a plain and simple scone, these ones had a hint of lemon to them. perfect. and slather away::
if you don't have scones handy, try croissants. no croissants? try toast, pretzel sticks, or an old piece of shoe leather. anything you spread this on becomes not only edible, but incredible. wow, i didn't plan that.
what you need to take away from this is the following:: lemon curd in your fridge is like having a bowlful of lemon meringue pie filling handy and at the ready. and nothing can ever be wrong with that.
i used the recipe in martha's baking book (minus the zest - i like things smooth) but you can find one anywhere online. they're all basically the same.
