this is by far the easiest recipe for potatoes, aside from just poking holes in them and letting them bake. i guess that would technically be the easiest. regardless, these potatoes are so good. here's what you do: grab a bag of small potatoes. these were little tiny yukon golds::
simmer until they are just tender. now move them to a cookie sheet that has been lightly oiled and smash away. i wound up using a fork as the potatoes kept sticking to my masher. brush on some olive oil and sprinkle with salt and pepper::
now bake at a high temp (425) for about 25-30 minutes. in the end, i popped on the broiler to brown up the tops a bit more::
oh the amazing crispiness. a dab of sour cream and some salt and these are too good to be true. i served them alongside a small roasted chicken and some steamed asparagus. heaven. find the full recipe here. i omitted the herbs and seeds but will surely test them out once this summer's garden is in effect.
